Thank GOD!!</title><content type='html'>&lt;strong&gt;&lt;span style="color:#ffff99;"&gt;多謝各方好友的問好&amp;amp;關心呀! 在剛過去的星期六, 總算一家三口(我與兩隻貓貓)齊齊整整的搬到新屋! 由於之前較忙, 根本無暇執拾, 於是在搬屋前兩晚, 我差不多是通宵packing, 兩晚加起來也只是睡了四小時左右. 感謝主, 雖然搬得有點狼狽, 但要搬的已搬好, 要棄掉的也已狠狠地棄掉, 搬到了新屋, 感覺就好像一切從新開始一樣, 很滿足也很感恩!&lt;br /&gt;&lt;br /&gt;尤記得四年前搬來馬鞍山, 因自己的疏忽, 家中的小貓在搬屋前三天走失了, 當時我真的接近崩潰啊! 雖然朋友們也很努力陪我找, 可是也找不到. 唯一慶幸是小貓在走失前已接受了絕育手術, 不至於再為社會增添流浪貓.&lt;br /&gt;&lt;br /&gt;雖然新屋跟舊的間隔差不多, 但真的不想將原有的傢俱擺位原原本本的複製過來. 真的很神奇, 在自己左拚右堆下, 原以為沒有足夠空間放一張完整餐桌, 竟然弄出個小飯廳來, 還足夠有餘的放一張餐桌跟四張餐椅. 哈, 太開心了! 於是昨天便花了$2800大元買了一套餐桌, 兩星期後便到步, 到時便可開個小小的House Warming Party啦!&lt;/span&gt;&lt;/strong&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/19136741-115197899561301195?l=e-cakegallery06.blogspot.com' alt='' /&gt;&lt;/div&gt;</content><link rel='replies' type='application/atom+xml' href='http://e-cakegallery06.blogspot.com/feeds/115197899561301195/comments/default' title='Post Comments'/><link rel='replies' type='text/html' href='http://www.blogger.com/comment.g?blogID=19136741&amp;postID=115197899561301195' title='14 Comments'/><link rel='edit' type='application/atom+xml' href='http://www.blogger.com/feeds/19136741/posts/default/115197899561301195'/><link rel='self' type='application/atom+xml' href='http://www.blogger.com/feeds/19136741/posts/default/115197899561301195'/><link rel='alternate' type='text/html' href='http://e-cakegallery06.blogspot.com/2006/07/everything-is-settled-thank-god.html' title='Everything is settled! MARGIN: 0px 10px 10px 0px; CURSOR: hand" alt="" src="http://photos1.blogger.com/blogger/1995/1075/320/Raisin%20Danish.jpg" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;其實我很愛吃pastry, 無論是西式的拿破崙甜餅、藍莓酥、吞拿魚酥, 還是中式的酥皮蛋撻、皮蛋酥, 通通都是我的下午茶最愛之選. 可是當你試過自己整pastry, 無論你有多愛吃, 也得叫自己好好節制. 因為當中所用的油份, 是普通蛋糕和麵包的x倍, 所以只可以小吃多滋味!&lt;br /&gt;&lt;br /&gt;以前多是用酥油來整藍莓酥或牛角包, 貪其方便處理, 容易將麵團捍平, 可是感覺酥油較不健康, 不宜多吃. 加上並非經常整pastry, 買了一大塊酥油回來, 真的要分很多次才用光. 今天整這個Raisin Danish, 用了牛油代替酥油, 口感更香更酥. 加上今次預先用rum酒浸過提子乾, 令烘焗後Danish內的提子乾更有口感. /&gt;&lt;br /&gt;&lt;br /&gt;很喜歡某麵包店的粒粒芝士包, 外脆內較的麵包, 包著香濃的芝士粒粒, 味道是一流的. 從前享受吃過自己的麵包才上班, 不是自己焗的特別好吃, 只因為自家home-made bread能帶給自己滿足感. 可是最近工作較忙, 平時真的很難抽到時間整麵包, 所以最近也多試了不同麵包店的麵包. 也好啊, 不多吃別的又怎能激勵自己要多進步呢!&lt;br /&gt;&lt;br /&gt;昨天中午做了些麵種, 特地用來焗今天的麵包. 可是包芝士粒粒時太大意了, 沒有好好將它們平均分佈, 以致焗出來便堆成一團. 不過味道還是滿意的! 真好, 明天可以吃這麵包才上班了!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span /&gt;&lt;strong&gt;&lt;span style="font-size:130%;color:#ffff66;"&gt;我回來啦!&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;其實都回來了差不多一星期, 可是一回到公司就真的忙得連呼吸的時間也不夠, 每晚也差不多九時半才離開, 回到家連寫遊記的力氣也沒了. 同事笑說我"有咁耐風流就有咁耐......". 嘻嘻, 同事收了我的手信也不敢說太多了!&lt;br /&gt;&lt;br /&gt;今天總算有機會整麵包, 差不多成個月沒搓過麵粉, 真怕會手硬時麵包更硬. 從北海道買了些調味香料回來, 他們多用來灑在白飯上吃或用來整壽司, 我在旅行時試過伴海膽飯吃, 真的好味得難以形容. 今次就將這些調味香料與肉鬆混合, 整了這個&lt;strong&gt;&lt;span style="color:#ffcccc;"&gt;北海道肉鬆包&lt;/span&gt;&lt;/strong&gt;啦!&lt;br /&gt;&lt;br /&gt;由於拍了太多相, 需要點時間整理, 所以今晚再分享旅行時的趣事吧.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;一連四天的澳門與台灣之行終於完結了, 工作時間雖不算太辛苦, 但因台灣的天氣突然轉涼及下雨, 自己在途中也差點著涼, 幸好回港後吃了點藥便沒事. 可是餘下的這星期也不見得太好, 有兩天要到廣州那邊, 回來後還要趕著完成手上的工作, 之後就可以開心又放心的去北海道玩了. 噢, 想起也有點得意忘形了...&lt;br /&gt;&lt;br /&gt;整個二月都很忙碌似的, 真的數得出在這個月做過多少個麵包蛋糕, 難得今天有點時間, 便與朋友一起忙裡愉閒, 在家裡整我愛吃的&lt;strong&gt;&lt;span style="color:#ffff66;"&gt;椰撻&lt;/span&gt;&lt;/strong&gt;和他愛吃的&lt;span style="color:#ffff66;"&gt;葡撻&lt;/span&gt;. 當然啦, 無論是誰愛吃也是我做的, 而他也很乖乖的從旁協助, 總算順利地做好兩款, 他還可以打包點回家呢. 味道方面, 我就很滿意椰撻啦, 可是葡撻的酥皮就略嫌不夠酥脆, /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;望穿秋水的北海道之旅終於近在咫尺了! 二月尾便會與友人出發, 雖然行程不算長, 只是五天的北海道和兩天的東京 但也夠我樂透了, 現在只怕在兩天的東京時間也足已令沒有節制的我倆"傾家蕩產".......回來時恐怕真的要天天搓麵包過日子了.&lt;br /&gt;&lt;br /&gt;雖然還有兩個星期才出發, 但這十幾天時間也不太好過, 工作忙得要命, 下星期又要澳門加台灣兩地走了, 好像在家的時間也不太多, 連做麵包蛋糕和抱抱貓貓的時間也沒有了. 幸好忙還忙, 工作的時間是還算是開心的, 最起碼可以暫時不用面對一些連自己也未知如何處理的問題.&lt;div class="blogger-post-footer"&gt;&lt;img width='1' /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;今天是人人生日的大年初七, 為食的團友們當然不會錯過這大好良機啦! 於是乎今天就舉行了一個大玩大吃大喝的小型生日會. 今次要負責的就是生日蛋糕, 當構思整什麼蛋糕時, 發覺好像很久沒弄過蛋糕了, 頓時想不出什麼花樣來. 於是就簡簡單單的弄了個&lt;strong&gt;&lt;span style="color:#99ffff;"&gt;藍莓夾心芝士蛋糕&lt;/span&gt;,&lt;/strong&gt; 其實也只不過在芝士凍餅中間夾了層藍莓醬, 讓軟滑的芝士涷餅加點甜甜酸酸的藍莓味道, 這靈感是來自上次Christmas Party心心所整的紅桑子芝士生日蛋糕. 估不到換了藍莓醬的味道也是十分好. 見大家吃得開心, 自己當然都開心啦. 在新年這喜氣洋洋的日子, type='text'>年初三...洗衫、執屋、整麵包</title><content type='html'>一連數天的新年假期很快就要結束了, 幸好不用四出拜年, 可以悠閒地渡過幾天假期. 不過還是悠閒地吃了很多不同的美食, 唉...只怪現在香港各食店在新年間也照常營業吧! 今天沒有出街, 一早起來便開始做家務, 洗衫、執屋、打掃, 別人在年廿八做的事我留待今天年初三才做, 沒法啦, 我習慣玩樂過後才收拾殘局的...嘻!&lt;br /&gt;&lt;br /&gt;雖然忙著做家務, 但也特地焗了些健康包包, 就是這個&lt;strong&gt;&lt;span style="color:#99ffff;"&gt;合桃提子全麥包&lt;/span&gt;&lt;/strong&gt;, 一於新年過後吃些粗纖維的食物, 感覺健康些吧. &lt;br type='text'>終於回到香港啦...</title><content type='html'>五天四夜的省港澳工作行程終於在昨天完結了. 真的很久沒試過那麼疲累, 睡得最多那天也只不過是5小時左右, 貪睡的我又怎能滿足呢! 尤其出發那天, 早上六時便要起程到車站, 香港突然轉涼, 外面還下著微微細雨. 哈! 難道我是"貴人"嗎!? 星期六那天晚上, 要獨自由廣州坐車到澳門渡過那夜, 外面雖然天寒地凍, 但既然到了澳門, 也很想到處走走. 最後到了一間小店吃了碗熱騰騰的美味水蟹粥, 那份溫暖和滿足真的難以形容啊! 回到酒店不久, 房間的電話突然響起, 是誰呢!? 意外地收到一位朋友從香港致電到酒店來問候我是否平安(因忘了帶差電座, 故手機沒電後便用不到), 又是另一份無法形容的溫暖啊! 好朋友, 多謝你的問候, 更多謝你的心意, 但抱歉沒給你買旦卷啊! 就整這款甜點招待大家啦!&lt;br /&gt;&lt;br /&gt;第一次用這個食譜做糯米池, 因為貪其方便, 不用開火蒸熟糯米皮, 只需放入微波爐叮5分鐘便成. 果然快靚正啊!&lt;br /&gt;&lt;br /&gt;食譜: &lt;a style="color:#99ffff;"&gt;包餡小Tips:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;好多人都覺得糯米團很黏手, 很難包芒果肉. 其實有個小tips可以與大家分享....&lt;br /&gt;糯米團叮/蒸好後, 放涼及雪凍一會. 之後在砧板面平均舖滿椰茸(好像整麵包般灑麵粉在檯上), 將一整團糯米團放上去, 再在上面灑椰茸, /&gt;今天心血來潮做了個新嘗試, 將百里香的香與芝士的濃混為一體, 效果出奇的理想, 出焗不久已吃了半個, 再加一杯香濃咖啡, 就是這個悠閒週末的簡便午餐了! 我想生活就是這樣簡單吧, 開開心心, 輕輕鬆鬆, 不論那五天的工作天多麼忙碌也好, 只要吃到自己亂撞亂試的實驗品, 心情也自然放鬆了很多!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#99ffff;"&gt;麵包解說:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;混了百里香的麵團發酵及鬆弛後, 將Mozzeralla Cheese切成條狀, 包入麵團四邊進行第二次發酵, 入爐前再在上面再舖上四條芝士邊及灑上百里香便成.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#66ffff;"&gt;備註: 靈感來自"芝心Pizza"及新產品"甘薯Pizza" (不要笑我賣廣告啊!)&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#ffff99;"&gt;同場加映:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;有些朋友問我第一次發酵要多久才算完成. 其實有很多因素需要考慮的. 一般在家中發酵最好維持麵團在26-28度左右, 如前幾天的寒冷天氣, 可在己蓋了保鮮紙的麵團器皿下放一小盤熱水, 再用保鮮紙或毛巾一併蓋上, 那在較低氣溫下仍可令麵團發酵理想. 至於時間方便, 我習慣以麵團大小作決定, 因不同麵團和造法所需發酵時間也不同, 就如很多麵包書也提到, 只須發大至原本體積2-3倍便足夠. 如不太肯定, 可用手指沾少許麵粉, 再插入麵團中間, 如小孔清晰可見, 而麵團又不會因而縮小, 那便發酴完成了 (如圗). &lt;a /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Pound Cake 跟muffin一樣是十分容易整的, 只需15分鐘時間便可入爐, 不消半句鐘便有新鮮好味的蛋糕吃了. 今天天氣冷得令人也懶惰起來, 連帶酵母的活動力也大大減慢, 所以在等待麵包發酵期間, 便做了小小的stock take. 咍, 發現尚有一隻己十分熟透的香蕉在膠袋內(我以為早在兩天已吃光了...哈!), 於是便弄了這&lt;strong&gt;&lt;span style="color:#ffff00;"&gt;Banana Pound Cake&lt;/span&gt;&lt;/strong&gt;! 在冷冷的天氣下吃熱呼呼的Pound Cake也有另一番滋味啊!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;其實這麵包也沒什麼名堂. 難得家中有新鮮的Basil香草, 本想簡簡單單整Focaccia, 可是又手多多加了些dried tomato及以浸dried tomato的油代替了olive oil. 所以焗起後變成了淡紅色. 又因手震震加多了水 (200g bread flour: 140g water), 可以想像這樣比例的麵團有多難搓吧! 最終也只好以油代麵粉來令麵團較易搓揉, 及發酵時以拉摺的方式去協助麵團伸延筋性, 那麵包才可以成功面世吧.&lt;br /&gt;&lt;br /&gt;新鮮Basil的香氣, 加上tomato的味道....單是麵包香已是一種誘惑啊. 而口感只是一般麵包的軟熟, 反而欠缺了Rustin Bread那獨特的口感. href="http://graceparadise.blogspot.com/"&gt;&lt;strong&gt;&lt;span style="color:#33ffff;"&gt;Grace Paradise&lt;/span&gt;&lt;/strong&gt;&lt;/a&gt;), 因為這個&lt;span style="color:#ffcc00;"&gt;&lt;strong&gt;法式小麥麵包&lt;/strong&gt;&lt;/span&gt;是用了她給我的天然酵母造成的, 酵母果然活力充沛, 包包的口感十分好, 而味道真的有點不一樣, 有吃homemade rustin bread的微酸味道, 很捧啊! 知道用天然酵母要較長時間發酵, 我便在昨晚搓好麵團後便放入雪櫃, 待今早再進行餘下步驟. 幸運地第一次用這些酵母也算是順利, 起初真怕用也用不來, 那還敢學人種呢, 真的怕一個不小心種了些天然"細菌"出來便慘了. 嗯, 看來我還是忍不住會自己種天然酵母了, 剛好家中有朿太陽花, 就用它們作開始吧!&lt;br /&gt;&lt;br /&gt;另一個新開始就是用了新到步的焗爐. 唉, 最終都是莫視交稅的壓力, 買下了TEFAL的26L焗爐. 嘩, style="color:#ffff00;"&gt;朋友, 新年&lt;span style="font-size:180%;"&gt;喜&lt;/span&gt;樂!!&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;2005年給了我很多回憶, 也給了我很多學習的機會. 雖未敢說已學懂了什麼, 但起碼在經歷的過程中是有得著的. 過去幾年, 我很努力去令自己活得快快樂樂, 在朋友看來我也算是快樂吧. 但畢竟快樂是靠外在因素帶來的, 例如吃一口美味的蛋糕, 買一件心愛的衣服, 見到一直想見的人, 甚或做一份喜歡的工作, 這通通都能令我快樂. 可是我知道神不單要我快樂地過, 衪更願意我每天都懷有喜樂的心去生活. 不用靠任何物質或事情, 單單擁有主耶穌, 心裡便已感到平安和愉快的. 心存喜樂...這就是我今年追求的目標啊!&lt;br
